Remember how I used to be the green smoothie queen? Yeah not so much anymore.
Things started to go downhill when I was pregnant. The baby didn’t like green smoothies (because she is Tyler’s kid after all) and I’d get super nauseous after I’d drink them. Once that passed I had gotten out of the habit of drinking 30 oz a day and it was tough to get back into. Because honestly who craves a green smoothie when a bagel or muffin is close by?
Well now that the babe is here I don’t really have an excuse to eat muffins or bagels in the morning and my zest for healthy eating is back (Sorry to my husband). Still though, I wasn’t loving my old smoothie concoction, I needed something new. Something less greenish to break me back in. So I researched, I pinterest-ed (that’s a word right?) and I experimented. Here is the product of my hard work.
It might not be the most beautiful looking smoothie, but it tastes super yummy and I’m back to drinking smoothies again so that’s all that matters.

Winter Berry Green Smoothie
1 1/2 Cups Water (You could also use coconut water but I think that’s gross)
2 Big Handfuls Spinach
2 Inch Chunk Cucumber
Big Handful Blueberries
Big Handful of Strawberries (5-7 medium sized strawberries)
2-3 TBSP Chia Seed
Gather your ingredients
In Blender combine water and spinach. Blend on medium low speed until greens are chopped and smooth like below
While continuing to run blender on low add cucumber and fruit a little at a time allowing time for blending before adding more.
Once all fruit and veggies are in the blender and is well combined add chia seed and continue to blend on medium low until it is well mixed in the smoothie. Once chia seed is blended in turn that puppy up to high and blend until the consistency is nice and creamy. If the mixture is still to think for you blend a little longer.
This made about 30 oz of smoothie. That is a little much for me to drink in one serving these days so I split it into two servings and refrigerated the leftovers. It will stay good in the fridge for a couple days. If storing in the fridge make sure it is in an airtight container and shake well before drinking. I personally store all my smoothies in my blender cups, makes it super easy to shake and drink the next day.
